Berry Fruit Juice

It is easy to make your own fresh flavoured juice from soft fruits. Use the fruits when they are fully ripe, if you can, and they will not usually need to be sweetened. Very acid fruits such as blackcurrants, redcurrants, and cranberries, however, need sweetening to be palatable. Weigh the fruit after hulling or removing the stalks.

MAKES:                                                     ¼ pint (425ml)

1 lb (450g) prepared raspberries, loganberries, blackberries or strawberries, washed.

4 tablespoons water (¼ pint (425ml) for strawberries)

½ oz (15g) sugar.

  1. Put the fruit into a heatproof bowl that will sit firmly on one of your saucepans. Crush the fruit with a potato masher, or the back of a spoon. Add the water.
  2. Sit the bowl on the saucepan, half filled with simmering water, for 20 minutes or until the juice runs freely from the fruit.
  3. Scald a large square of muslin in boiling water, and wring it out. Place a nylon or stainless steel sieve over a bowl and line it with the wet muslin.
  4. Mash the beated fruit again to press out as much juice as possible, then pour the pulp and juice into the sieve. Fold two opposite sides of the muslin securely over the fruit, then twist the ends tightly in opposite directions to force out the juice until no more comes out. Discard the pulp in the muslin.
  5. Stir the sugar, if used, into the juice until it has dissolved completely.

You can make the same amount of juice using redcurrants, but you will need to use ¼ pint (150ml) water with the fruit and add ¼ – ½ oz (7-15g) sugar, with blackcurrants and cranberries, 1 lb 450g) of fruit need ¼ pint (425) water and makes 1 pint (570ml) juice. Stir ½ -1oz (15 – 30g) sugar into blackcurrant juice and 1-1½ oz (30 – 45g) into cranberry juice.

For the fullest nutritional benefit, drink the juice as soon as it is made, either as it is or diluted with up to 3 times its volume of soda water, mineral water or skimmed milk. Alternatively, let the juice cool, then put it in a covered jug and keep it in the refrigerator for 2 days.
